I am trying to install two shutoff valves on the lines marked with X's. There is not a lot of free line to work with. Can I even fit two Sharkbite valves here? What would be an alternative?

The bottom open line is an abandoned line that was part of a prior slab leak.

Those all appear to be crimped fittings and with no straight piping where you would be able to add a valve or new fitting after cutting most of this stuff out. Crimped fittings can't be salvaged or reused, responsibly. Think about cutting that whole mess out of there and redoing it with sweated connections. Where your two X's are, add tees and exit the tee with a short piece out through the wall for your shutoff valves.
