So, I was trying to clear the Great Plateau, and I thought I could do it faster by swimming across the River of the Dead (yeah, I get why it's named that now). I had cold resistance from consuming a dish with the spicy peppers in it, but I still rapidly lost hearts once I jumped in and then I died... I assume I died from the cold (unless swimming rapidly drains hearts for some reason), but since I had cold resistance, I shouldn't have died, right?

Water in cold or extremely cold climates is just that dangerous. Cold resistance isn't enough to protect you while you're in water -- nothing is.
There is a loading screen tip to this effect:
Cold Water
Swimming in cold water will lower your body heat and cause you to take damage. Cooked food and special garb won't help you.
